Freezing

Some produce I prefer to freeze instead of can or dehydrate. I measure them into the quantity needed for recipes that they will later be used in.  Then I freeze them.  After the produce is frozen I put it into a vacuum seal bag and seal it.  Label with the date and quantity on each bag.  When thawing frozen produce you may find the liquid had separated from the produce.  Do not drain that liquid.  Pour it all into the recipe.  Remember the liquid would be there in the freshly chopped or grated produce.

The things I like to freeze:
pumpkin, cooked and pureed - Pies, bread, muffins
zucchini, grated - Bread and cookies
butternut squash, cooked and pureed  - Great for thickening soups and stews.
corn
bananas, overripe and peeled - Bread and muffins
berries, freeze single layer on a cookie sheet making sure the berries do not touch
            each other.  Then when placed as a group in a bag they can be taken out
            individually.
